Meet the Chef, Jesus Alcelay
Well known in Boise's restaurant and Basque community, Chef Jesus Alcelay has been a fixture of the Idaho restaurant scene since he immigrated here from San Sabastian, Spain, in 1975. Since arriving in Boise, Chef Alcelay has applied his craft at the Arid Club, and Red Lion hotels in Boise, Spokane and Elko, Nevada, and at his own Boise restaurant, Oñati, where he thrilled local diners with the traditional Basque dishes of his native land for 17 years.
Chef Alcelay's interest in cooking started early, inspired by the flavors and aromas flowing from his mother's kitchen. At 18, he began his formal training, learning classical cooking methods in demanding kitchens of some of Europe's finest hotels. Today this education is reflected in Chef Alcelay's uncompromising standards for the quality of produce, premium beef, fresh seafood and local game that he sources for the Cottonwood Grille's guests. Virtually everything is hand-made daily, from scratch, including all stocks, sauces, even our bread, baked fresh every morning.
