2 tbs. olive oil 1 tbs. chopped garlic
1 tbs. chopped shallots
2 oz. dry white wine
4 oz. demi glace
1 tsp. fresh thyme
1 tsp. chopped Italian parsley
1 tsp. sweet butter to mount
