Serving contemporary American cuisine, the Cottonwood Grille opened its doors in October 1999 under the direction of Peter and Hilary Blatz, in partnership with the Hormaechea family of Boise.

As ardent food lovers, we take a unique approach to service, wine and food, having secured strategic relationships with the West’s premier suppliers of fresh ingredients.

• Prime Beef is the highest grade of beef the USA certifies. We age ours on-site for outstanding flavor, then butcher it ourselves.
• Our all-natural antibiotic-free chicken is flown in fresh from Petaluma, CA.
• All of the exotic fish we serve is often only hours out of the water.
• Small, local Idaho ranchers provide our fresh lamb.
• Our fresh pork is processed locally in Garden City.
• We use markets from Boise to Los Angeles to ensure a ready flow of fresh herbs, vegetables, and fruits.

Because wine is such an integral part of a memorable dining experience, our approach to the wine list at Cottonwood Grille is unique as well.

• Our wine list prices are comparable to those of retail stores, enabling guests to enjoy a wine or a series of wines with each course without paying “restaurant” prices.
• An 18-spout wine-preserving unit offers a great variety of “by the glass” wines.
• Our wine list is arranged by varietal designation, price, and progressively in order by other characteristics like dryness or oakiness. This enables guests to choose a wine in the variety they like and style they prefer, even if they are not familiar with that winery.

But what’s a meal without great service? The service staff at Cottonwood Grille is rigorously trained in all aspects of food and wine service, and are encouraged to treat our guests as they would treat guests in their own home. Daily wine and food meetings are held to ensure up-to-date product knowledge.

Finally, we pride ourselves on the warmer ambience of Cottonwood Grille. Looking over the Boise River, surrounded by sandstone, alder wood, and luxurious furnishings, one can’t help but feel at home in this magnificent space.
