Dwayne was born on Maui, raised on Oahu, and started his baking career by helping his mom mix cakes at the age of four. His formal education was Culinary Arts and Dining Room Management at Kapiolani Community College. Originally on track to become a chef, Dwayne followed his heart into the pastry specialty. He has since worked in bakeries, restaurants and hotels, developing his creative flair and inventiveness.

- Takahashi Ishikawa – three time Olympic Gold Medal Winner
- Stanton Ho – US Pastry Team Champion and World Pastry Cup recipient
Accomplishments and participation highlights include:
- Wedding Cake demonstration at the Chef de Chef Convention
- Created the Smithsonian Institution’s 150th anniversary cake for the Freer Gallery with Stanton Ho, pastry chef at Las Vegas Hilton
